Sweet Almond Tea Cakes

A sweet, moist and light tea cake. The texture is a cross between a cookie and a cake. They are crisp on the outside and fluffy and chewy on the inside. The almond flavor gives it a subtle boost.

 ¼ cup Butter Flavored Shortening
 1 stick Salted Butter
 2 cups Sugar
 1 tsp Almond Extract
 2 Eggs
 ½ cup Buttermilk
 2 tsp Baking Powder
 1 tsp Baking Soda
 4 cups Flour

1. You will need a medium and large mixing bowl.
2. In a large mixing bowl, combine your shortening, butter and sugar. Mix until creamy.
3. Add the almond extract, eggs and buttermilk. Continue to mix
4. In your medium bowl, mix your baking power, baking soda, and flour together.
5. Combine your dry and wet ingredients.
6. The dough will be wet and a little sticky.
7. Put the dough on a flat surface and knead it folding
8. Flatten the dough and cover with plastic wrap.
9. Cool the dough in the fridge for an hour.
10. Preheat oven to 350.
11. Remove from the fridge. Use a roller and roll out on a flat surface.
12. You can use a cookie cutter to cut out shapes. I chose round shapes for this recipe.
13. Line parchment paper on a cookie sheet
14. Place cookies on baking sheet. Cook for 11 to 12 minutes.

Apple Pie Sundae

How many of us like apple pie? I don't know if it's the apples, crust, ice cream on top, or the combination of all three when I take a bite. I needed a quick treat, and I had some apples I wanted to use courtesy of Honeybear Brands. These apples aren't just any apples. Pazazz apples come from the Honeycrisp apple category. The apples taste sweet and tart with every bite. According to Honeybeard Brands, the Pazazz apple become available in late December. This recipe is quick, easy and doesn't require any baking. It gives you the taste of apple pie without the crust. You only need four ingredients.

Apple Pie Sundae

 2 Pazazz Apples
 1 pt H-E-B Creamy Creations 1905 Vanilla Ice Cream (can sub any brand)
 4 tbsp Hershey's Sundae Dream Caramel Syrup
 1 tbsp Cinnamon

Peel and slice apples in small cubes.

Spray skillet with non stick cooking spray.
Pour apples in skillet and cook for 2 minutes.

Pour 1 tbsp of cinnamon and stir until all apples are coated.

Cook the apples for 10 minutes or until soft.

Take out a small mason jar and layer the toppings.
The first layer will be the apples, then add the ice cream, another layer of apples, then one more scoop of ice cream. You will use about 1 1/2 cup of ice cream per mason jar.

To finish the sundae off you can drizzle some caramel sauce over the sundae. The apples are a little crunchy and the ice cream and caramel combination tastes just like an apple pie.
